RETURN TO TERROIR

In 2006, the Azienda Agricola Cefalicchio subscribed the Charter of Quality proposed by the "Renaissance des Appellations / Return to Terroir" Group (www.biodynamy.com). The Charter does not speak in terms of "bio" or "not bio", but simply of actions which permit an Appellation to express itself. The Charter encourages the winemaker to do his best, and it informs the client of the effects of gestures in the fields or in the cellar on the expression of the Appellation.
